This wine is produced from vineyards situated around the medieval city of Carcassonne. The sloping vineyards are planted mainly on clay and limestone soils and the climate is primarily Mediterranean, with only a slight influence from the cooler Atlantic. In this warm climate, it is important to harvest the grapes at just the right moment of maturity to provide a good fruit and tannin balance and a level of acidity that will ensure a fresh, inviting wine.
The Syrah and Merlot grapes were vinified separately using to traditional methods, followed by maturation in stainless steel for 6 months prior to bottling.
